The Sound of the Sea is one of Heston’s most multisensory dishes. Nostalgic and memory evoking, it summons up the tastes, textures, sights, smells and sounds of the shoreline, with gulls keening and waves splashing.
For Heston, its effects were heightened even more the first time he tried the dish with his favourite sake – an emotional experience that actually raised the hairs on the back of his neck, showing once again that the right combination of ingredients can create the most extraordinary of experiences. Today is World Sake Day so perhaps this is a sign that it's time for a trip to the seaside?
